Spicy Fried Onion Rings
 
1 cup   flour  
1/2 tsp   salt  
1/4 tsp   black pepper  
1 tsp   dried oregano flakes  
1 tsp   Cajun spice  
4   large onions  
3 cups   corn oil for frying  
  salt  
 
 
1 Cut onions into very thin slices and separate into rings. Soak onions in ice water for one hour. Set aside.
2 Combine flour, salt, pepper, oregano and Cajun spice in a large bowl. Heat oil.
3 Remove onions from ice water and dry thoroughly with paper towels. Dredge in coating, then fry until brown.
4 Drain on paper towels. Season with salt and serve.
 
Servings: 8
 
Cooking Tips
The oil temperature will drop when the onions are added, then rise as the onions cook; regulate the heat accordingly.
