This is a sweeter, healthier alternative to greasy fries. Sprinkle a bit of salt or cayenne pepper over them while still hot.

1 1/2 lbs   sweet potatoes, scrubbed and peeled
2 Tbs   soy sauce
1 tsp   vegetable oil
2   clove garlic, peeled and minced
1 Tbs   firmly packed brown sugar

1 Preheat oven to 400°F.
2 Cut sweet potatoes into ¼-inch strips; set aside.
3 Whisk together soy sauce, oil, garlic and brown sugar. Toss sweet potatoes in a bowl with soy mixture.
4 Lightly coat a rimmed baking sheet with vegetable cooking spray; place sweet potatoes on sheet in a single layer and cook for 20 minutes, gently stirring every ten minutes, or until crispy and golden brown. Serve hot.
