Shiitake and Wild Rice Pilaf
 
4 oz   Shiitake Mushrooms, sliced  
1   clove Garlic, minced  
2 Tbs   Olive Oil  
2 cups   Cooked Wild Rice  
1/2 cup   Toasted Walnut pieces  
1/4 cup   Green onions, sliced  
1 Tbs   Grated Lemon Peel  
 
 
1 In broad skillet, saute mushrooms and garlic in oil until tender, 1 to 2 minutes. Add rice, walnuts, onions and lemon peel, mixing to blend. Season with salt and pepper; heat to warm through.
