Basic Crepe
 
3   eggs  
1 1/2 cups   flour  
1 tsp   sugar  
dash   salt  
1 1/2 cups   milk  
2 Tbs   melted butter or oil  
 
 
1 Mix liquids first including melted butter or oil.
2 Add eggs.
3 Add flour last.
4 If wisking or blending by hand then mix for 3 minutes until smooth. If making in blender or food processor mix for 1 minute on high speed.
5 Stop and scrape down sides.
6 Blend smooth, 30 seconds to 1 minute
7 Use batter immediately if made in processor or blender, let rest for 1 hour if hand mixed. Use within 24 hours.
