Baked Cheese
 
4 oz   geta or goat's cheese  
1 Tbs   good olive oil  
1/2 tsp   red pepper flakes  
  pepper  
 
 
1 Preheat your oven to 400°F. Cut the cheese into 1/2-inch thick slices and place them in an ungreased baking dish. Drizzle with half of the olive oil, and sprinkle with the red pepper flakes and pepper.
2 Bake, uncovered until just melted, about 8-10 minutes. Serve with the remaining olive oil drizzled over top.
