Marinated Mushrooms
 
3 lbs   fresh white whole mushrooms  
2 tsp   fresh parsley, chopped  
3/4 tsp   black pepper  
3/4 cup   white vinegar  
2   cloves garlic, pressed or mashed  
1   onion chopped fine  
6 Tbs   oil  
1/2 tsp   salt  
 
 
1 Put washed mushrooms in pot, pouring vinegar over. Add salt. Bring to boil and cook for five minutes. Drain, meanwhile, combine other ingredients.
2 Toss mushrooms together with oil, etc. Refrigerate until about one hour before serving.
